When we were in Nelson for Anne-Marie's and Martins Wedding last year, Faith made this wonderful Pasta.
Olive Oil (approx 1 TBS)
Walnuts - roughly chopped
Cayenne (a dash)
Salt and Pepper
Parmesan (about 1/4 cup)
Ricotta (250gr pot)
Spinach (roughly chopped about a bunch but depends on size of bunch)
Smoked Salmon chunks or slices roughly chopped.
All quantities depend on number of people.
Put oil, garlic, basil, cayenne, salt and pepper in a food processor or blender and process briefly
Add Parmesan and blend again Add Ricotta and blend again
Add Spinach bit by bit and blend. (I didn't do this, I added it to Pasta separately)
While preparing sauce cook pasta, any shape but fusilli, shells or penne best. Before draining pasta take out 1 cup of water and pour into blender a bit at a time so as not to get too runny a sauce. I also didn't do this, it depends on whether you want a sauce or a dryer mix.
Toss smoked salmon (warmed in microwave briefly so dish doesn't go cold) then add sauce and warm spinach (if adding separately) . Top with favorite roasted seeds, pumpkin, sunflower or pine nuts.
